New Recipe!!


EASY new recipe that is SO great, initially inspired by my daddy.

Cook however many servings of whole wheat pasta you need (I made 4 servings... Brenton and I split 3 of them (haha) and I had the last one for lunch today.)

In the meantime, in a pot, cook a T of chopped Garlic, a big handful of washed, stemmed, and chopped mushrooms, 1/4 c chopped onion, 1 head of broccoli florets, 1/2 c frozen peas, and a huge handful of fresh spinach in a couple of T of Olive Oil until the spinach wilts and the mushrooms get soft-  generally just as long as it takes for the pasta to cook.

When the pasta is done, drain it and mix it with the veggie mixture.  Top with 1/2 of a small Avocado and you've got yourself a meal!!

I have a recipe kinda like this, but more "green"

For a twist, try while Wheat Rigatoni and toss it with Edamame, Broccoli and Pesto. Grate a little Parmesan over top (or Omit if you're Vegan) and Voila.

We call it "hulk" pasta here at the house.
