Eatin' out of the Pantry- Part 6

Tonight on the menu was Tempeh Chili.  You can find the recipe here.

















I am sad to say that the 'eating out of the pantry' challenge is now over.  I have run out of bananas, bread, and chips, so I better get to the store.  I must say, though, I did a pretty good job making up menus using only things that we had in the house!!!  You should give it a try sometime.  Flex your creative muscle!!

Eatin' out of the Pantry- Part 2

So far so good!  Eating out of the pantry has been pretty easy so far!  Here is dinner:
















Tempeh Mash in Cabbage Leaves

In a pan over medium heat, cook chopped Tempeh and any frozen veggies you have on hand in enough tomato sauce to cover.  Simmer until hot and add salt and pepper to taste.  Spoon into a cabbage leaf, fold up like a burrito, and nom nom nom.

Memorial Day Cookout- The Verdict


After all of the prep work for the Memorial Day Cookout- how did everything turn out, you ask?  Well....  here are my thoughts.


We made absolutely DELICIOUS veggie kabobs.  Look at all the veggie yummies!!!

Aaron (my brother-in-law) did a GREAT job of keeping the meat separate from our non-meat selves.  Compliments to the grill-master!!  Gotta love the ove glove!

Next time I'll cut the tempeh into smaller pieces and marinate all of the sides.  The part that was marinated was very good- nice and smoky with a little bit of heat from the BBQ Sauce.  The parts that were not were bland, but after dipping it into the sauce it all came together very nicely.  My sister-in-law did say that my corn was the best corn that she had ever had, so that's a keeper!!!!  Oh and the veggies?  FANTASTIC.  Smoky and perfectly grilled.  Again, good job Aaron!!

I couldn't write about a cookout at my brother and sister-in-law's house without showing pictures of the cutest little darling in the world.

New Recipe- Tempeh Stir Fry

Hello, Tuesday!  I tried a new recipe for dinner last night- Tempeh Stir Fry.  This was completely made up, and Brenton ate the WHOLE thing... so you know it must have been good!



Recipe (serves 2 good size dinners, or 3 small):

1 Package of Organic Tempeh
2 Heads of Broccoli, chopped
1/4 C Chopped Red Onion
1/4 Water

Pepper, to taste
Drizzle of Tahini
 



Melt Coconut Oil in pan over Medium Heat
Chop Tempeh into small pieces and add to pan.  Cook a few minutes, until beginning to brown
Add rest of the ingredients and saute until broccoli turns bright green
Put on a plate, and drizzle Tahini on top.

This was a YUM YUM meal!!  Brenton and I both finished our plates.  So fast, so good!

BBQ Tempeh Sammies!

Good evening everybody! I tried a new recipe tonight- BBQ Tempeh Sandwiches! These were so quick to make (LITERALLY from pan to plate in 15 min), and super good!! Here's my recipe-

Ingredients:

BBQ Sauce
Equal parts Ketchup, Vinegar, Mustard (I used 1/2 C each)
Salt, Pepper, Brown Sugar to taste

1 Package of Trader Joe's 5 Grain Tempeh

*In a small sauce pan, heat BBQ Sauce on medium, until simmering (a minute or two)
*Cut up tempeh into small pieces, and put into pan. Mix with sauce until covered and cook until hot (this particular tempeh is pre-cooked already)
*Make into a sandwich using whatever bread/roll you'd like (I used Trader Joe's Sprouted Wheat, toasted for a minute or two in the toaster oven), cheese, veggies (I used spinach, but onion, pepper, and tomato would also be good), and BBQ tempeh. Serve immediately.

The verdict? Well, Brenton took the first bite and said "this is... funky" (LMAO!.... great...), so I tried it and it tasted (to me) JUST like sloppy joe's! I'll definitely make them again, well, for me anyway. Brenton doesn't LOVE BBQ sauce to begin with, so that's why he was kind of like 'meh...'. But they were definitely a quick, healthy, and filling meal! We didn't even have fruit after dinner for dessert!

Tempeh Time!

Happy hump day, everyone! Last night I made Tempeh for the first time EVER.



Talk about a protein and fiber power house, no?! And hardly any sodium, no cholesterol... AND it's fermented, so, good for the insides! When I pulled it out of the package, I gave it a sniff. It kinda smelled like mushrooms and nuts, but not that strongly. It hardly had any smell at all.

Anyway, first, I cut the big patty there into smaller cubes, and steamed it for 10 min (I heard it was supposed to take away any bitterness. It did!)

Then, I boiled it for 10 min in a new sauce from TJ's that I got-



Once it had boiled, I topped some rice and veggies I had prepared with the Tempeh and extra sauce.

Ta-Da!!



And the verdict? Well... Brenton hardly ate any of it. Hahaha. I, on the other hand, liked it pretty well!! I ate almost all of it. Brenton said he would have liked it better with freshly steamed veggies (not frozen), or a different sauce. I agree with the sauce thing- it was good, but not flavorful enough (it needed salt, garlic.... something). These would be really good crumbled up in a BBQ sauce like a sloppy joe. That'll be my next experiment.

Go out and try Tempeh. I'll definitely buy it again, but not prepare it quite this way if I want Brenton to eat it. Oh, and the package was only $1.69 at TJ's. NICE!
