Yoga Spy

Hola chicos y chicas!  TGIF!  What a week this has been.  It'll be nice to enjoy the weekend without having to do a million things.  Last weekend was CrAzY busy.... this weekend....ahhhhh... not so bad.

I'm sitting here enjoying a loooovely breakfast.
















YUM.  Perfect for a Friday morning.

So last night, I made these YUM-O vegan cookies.  Catch the recipe HERE.

















Yes.... they were THAT good.  I only did a half-batch.... or else I would eat them alllllll.  These tasted like there was butter in them.... without the butter.  Crazy!

So last week and earlier this week, I was SICK.  I had caught a monster cold that I just couldn't seem to shake.  So, I heard about this:
















Sweet, right?!  Homeopathic medicine to cure my cold.  I used 3 doses (or maybe 4?) and it zapped my cold in no time flat.  And then.... this happened...
















See that active ingredient???

.....that's duck liver extract.

I think I died a little.  It worked so well.  SO WELL.  Nothing else worked to get rid of my cold.

I guess all I can say now is "thank you, mr. duck, for helping me get over my cold".  Knowing what the active ingredient in there is makes me not want to take it again.  But it helped.  A lot.  BAH!!

I ended the evening with some yoga.... and a spy came into the room (aka my hubby).  Attraaaaactive....


 


Awesome.

On a less embarrassing note, tt's going to be 59 in Central Ohio.... yay for spring preview!!

Molasses... a journey

So, I bought some Organic Molasses yesterday because of all of the good things I've heard about it (high in potassium, high in iron...).  Being the impatient moron that I am (hahaha), I was so excited to try it that I opened it as soon as I got home and took a taste.  BLLLEEEECCHHH!!!!  It was so bitter!  But, rather than getting discouraged about my recent purchase, I decided to make cookies out of it.  What else, right?!  Here is the recipe I threw together...

1/2 C Walnuts
1/2 C Almonds
1/8 C Rasins
1/2 C Dates
1 t Cinnamon
1 t Ground Ginger
2 T Molasses

Grind everything together in a food processor
Roll into balls
Freeze until solid (about 20-ish minutes)

The verdict??





These babies were GREAT!!!!  Molasses is an acquired taste... and with these little guys I think I'll acquire it haha!!

Christmas- Over Already!!

Hello everybody!  It's hard to believe that Christmas came and went so quickly!!  I tried Averie's Raw(ish) Gingerbread Cookies- and I have to tell you, I will make these again and again.  THEY WERE SO GOOD!!! 

Here is the recipe I used (adapted):

1/4 c flax meal (I used Bob's Red Mill Flax Meal)
1/4 c walnuts
2/3 c almonds
2 t cinnamon
2 t ginger
1 t pumpkin pie spice
3 T agave



Preheat oven to 300 degrees

Blend all of the ingredients together in a food processor
Roll into balls or roll out with a rolling pin and plastic wrap and cut with cookie cutters
Bake for 8 minutes


See, they're raw-ish.  I'm not sure what temperature they actually get to...but I bet it's too high for them to really be raw.  If you want them to be raw, you can leave them out on your counter for a few days, dehydrate for a few hours, or put them uncovered in the fridge to harden.  I didn't mind baking them- and they were SO good warm!!!

Mmmmm cookies!

Good evening to all! I made some YUM-O cookies tonight! Don't they look scrumptious?!



Ok maybe not the BEST picture in the world, but they are super good!

Ingredients-

1/4 C Walnuts (or more if you like them!)
1/4 C Almonds (also, more if you like them!)
1/2 C Rolled Oats
1 T Cinnamon
1 T Flax Meal
2 T Raisins (I always add more- I LOVE RAISINS!)
1/2 C Honey (you may need more if you think the mix is too dry)

Preheat oven to 300 degrees
1- Grind up the walnuts and almonds in the food processor
2- In a bowl, mix ground nuts, rolled oats, cinnamon, flax meal, raisins, and honey until the mixture is sticky and feels like it will hold together
3- Press into cookies and place on a baking sheet (no need to grease it or use parchment)
4- Bake cookies for 12 minutes

As far as how many cookies this recipe makes- it depends on how big you make your cookies. I got 16 cookies out of it when I made it this evening.

Whole Wheat Oatmeal Cookies!

Hi everyone! I just found my new 'splurge'... Whole Wheat Oatmeal Cookies! That's right- no white flour in these cookies... only good stuff.

I was lucky to find this recipe online:
Healthy Oatmeal Cookies (with Honey)
Ingredients:


Dry ingredients
1 cup whole wheat flour (a pinch more depending on the moisture of the mix)
1 1/2 cups of Large Flake Rolled Oats (smaller flake is ok too)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 Tbsp Cinnamon (I actually use about 3 Tbsp--got to love cinnamon)
1/2 tsp Nutmeg (optional)

Wet ingredients
1/2 cup honey
1/2 cup oil (corn, grapeseed or olive) * you can also use some applesauce to replace some of the oil if you wish*
1 Tablespoon Molasses (I used Agave)
1 egg (beat with 1 Tbsp Water)
1 tsp Vanilla

Yummy ingredients
1/2 cup raisins (1 cup for my Dad's batch)
1/2 cup walnuts (more for my Dad's)!!

Preparation:

Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).

In a large bowl, mix all the dry ingredients together.

In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).

Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.

COOL the mix for 20 minutes in the fridge. (I omitted this step)

Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.

Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

This recipe was SO good. They would be really REALLY good with chocolate chips (note for next time). It's official- if I'm wanting cookies, these are what I'm going to make. ALL REAL INGREDIENTS, and they're yummy!! In my recipe I used MOSTLY Applesauce (1/2 cup of Applesauce, 1/8 cup of Canola Oil because the mix was a little dry). They turned out pretty cake-like, but very hearty!!

Farmers Market!

Oh how I love farmers markets, especially on SUNNY DAYS! It's about time we have a sunny day in Central Ohio!!! SHEESH!

Look at all of the goodies I got!!!







Tons of organic produce (I'm not sure if the peaches are organic or not), and some Cookie Cop cookies.



What?? You've never heard of the Cookie Cop?!?! Check him out!!!

I went outside to see how my OWN organic garden was going- and pleasantly surprised!!!







Cute, no?? Hehehe lots of little guys growing out there!!! And to think that I started all of these from seeds. Amazing.

Raw Cookies! YUM!

Good morning bloggies! Yesterday was a busy day, and today will be the same. I made another breakfast cookie this morning (yum), but before I remembered to take a picture of it, it was gone!! Oh well, it looked like yesterday's!

We celebrated mother's day with my mom yesterday afternoon. I brought over some 'cookies':

These are chocolate:



And these are cinnamon roll:



Here are the recipes that I found here:

CARLIBAR RECIPES
For each, blend in food processor until dough-like. If it's too dry, add a
little water 1 tsp at a time. Press into an 8x8 pan. With a sharp knife, cut
into 16 pieces. Wrap in saran wrap if desired.

Cinnamon roll
1 c. dates
1/4 c. Walnuts
1/4 c. almonds
1/8 c. cashews
7/8 tsp cinnamon
5 TBS raisins

Ginger Snap
1 c. dates
1/4 c. almonds
1/4 c. pecans
1/8 tsp ginger
1/8 tsp cinnamon
1/16 tsp cloves

Chocolate Coconut
1 c. dates
1/4 c. almonds
1/4 c. walnuts
2 TBS coconut
½ TBS + ½ tsp cocoa powder
1 tsp water

They were VERY VERY similar to Larabars!! YUM!! I was able to make about 12 cookies per recipe. They were a big hit, especially the Cinnamon Roll ones. Note to self, and all DISers out there- these would be GREAT park snacks!!!
