Kashi Pizza

Good evening all!  The last couple of days I have felt a little bit weak and tired.  After doing an analysis, I realized that I have not been eating enough calories (especially with how active I have been shoveling snow off of the driveway, exercising, and just generally being busy).  Today, I was a-ok to change ny calorie deficit, and help get myself back up to where I need to be.  For dinner, we got some Kashi frozen pizza (Roasted Veggie, with a lot of added peppers) and tons of fruit and veggies.  ...and a not so good splurge- Original Sun Chips.  (eeeeek!!!!)  Although, they're not THAT bad... ok ok I know...



It's very important that when you are a vegetarian, and you are very active, that you get enough calories in your system.  Of course, be sure that they are high quality calories, with a lot of variety, and not only Sun Chips (...oye...).

When I was a vegetarian (I was an ovo/lacto veggie for 3 years), my biggest struggle was always getting enough complete proteins. I don't like soy or tofu, and beans & lentils can get old. What kinds of protein sources do you use?

I try to avoid soy if I can, too. Since we're also lacto/ovo, we eat a lot of milk products (like cheese, Greek yogurt, skim milk, and whey protein powder), eggs and egg whites, lentils, beans, nuts and nut butters, seeds, quinoa, tempeh (though it is soy), and grains. The main trick for us is eating enough calories each day, rather than enough protein.
